Anyone responsible for carrying out “on the job” training:  This course will be carried out to the standards required by the Hotel and Catering Training Board for the Certificate of Competence in Craft Trainer award.

Unit supervisors:  Basic health and safety techniques and information for unit supervisors.

Anyone required to interview & recruit staff: Refresher course for previously trained staff.

Secondary School Unit Supervisors:  How to deal with difficult situations in the work place.

Catering

Every staff member:  The course enables staff to understand the importance of customers.  Available for teams to participate and obtain a unit Customer Care Certificate.

Catering Induction

1 Day

Every newly appointed General Assistant:  Should be attended within 8 weeks of starting and covers aspects of the job, Health & Safety and Pay & Conditions.

Safe Catering

1 Day

On site

Every member of Catering Staff:  Designed by the Environmental Health Department to ensure staff have a knowledge of H&S within the kitchen environment.

Basic Food Hygiene

1 Day (over 2 days)

All catering staff:  An essential course for all food handlers followed by a multiple-choice exam and recognised certificate if successful.

Intermediate Food Hygiene

3 Days

Every Catering Supervisor:  Change to Food Hygiene Regulations means that Catering Supervisors need a greater knowledge to become effective managers.

Assistant in Charge

10 Days

New As in C and those requiring refreshment:  To ensure As in C are fully conversant with Direct Services’ catering policies and procedures.

Computer Training

3 Days

Catering Sups, DCS, DC:  Introduction to Computers, software and certain Direct Services paperwork returns.

Food Prep and Cooking.  (NVQ 2)

3 Terms (1day/wk)

Catering Supervisors / Deputy Cat Sups and Deputy Cooks:  Enables staff to obtain a recognised qualification.

Supervisory Management (NVQ 3)

3 Terms

(1day/wk)

Catering Supervisors:  Designed to enhance the skills of catering supervisors and give them a recognised qualification with workplace assessment.

Leading a Catering Team

1 Day

Newly appointed Catering Sups and As in C:  Basic management training.

Cleaning

Cleaning Awareness

All cleaners:  A short in house course to ensure staff are familiar with the practical aspects of their work.

British Institute of Cleaning Science 1

3 Days

Cleaning Supervisors and cleaners seeking promotion:  Provides training in a number of basic areas of cleaning relevant to participants’ need.

British Institute of Cleaning Science 2

2.5 Days

Cleaning Supervisors:  Provides training in a number of areas relevant to participants’ need.

Defensive Mini Bus Driving

1 Day

Staff required to drive Direct Services personnel:  Enables mini bus drivers to better identify areas of potential hazard and thus reduce risk.
